Undermount sinks, heavy commercial-style faucets and pot fillers all put demands on the counter, the cabinet and the supply that a standard drop-in never did. Getting the rough-in right is what keeps the finished job from sagging or leaking two years later.
Ice-maker and pot-filler runs are worth doing with a proper shutoff you can actually reach. The five minutes it takes at rough-in is what saves a wall later.
